-- HOW TO PREPARE THE PERFECT CUP --

  1. Purchase coffees as whole bean whenever possible.  Ground coffee quickly begins to lose some degree of flavor even under protected conditions.  Ideally, purchase no more coffee than you normally consume in a two week period.  Store coffees in air-tight containers in a cool, dry space away from direct sunlight.
     
  2. Never store coffees in the refrigerator.  If you must store coffee longer than four weeks place it in the freezer in an tight air-tight container.  Do not remove the entire container from freezer but remove only the amount needed.  You want to avoid changing the temperature of the bean because that will cause moisture which will dissolve  the essence of the coffee - that is what you want to end up in your cup.
     
  3. Use the correct grind for the machine or brewing method you have chosen.  If your coffee is bitter and overly strong, the grind is too fine or you have used too much coffee.  If the brew lacks flavor or strength, it may be that the grind is too coarse or you have used too little coffee.  Generally speaking, the faster the brewing medthod, the finer the grind.  Take a look at our proper grind chart.
     
  4. Always use freshly drawn cold water.  Never use softened water, or water with chlorine or any other chemicals.  If possible use bottled or filtered water.  The essence of the coffee bean is delicate and can be adversely affected by the chemicals common to tap water.
     
  5. The recommended portion of coffee to water is two level tablespoons per eight ounces of water.  Adjustments should be made for your individual preference.
     
  6. For best results, always brew to the full capacity of your brewer.  Automatic drip or pour over methods are superior to percolation which boils the brew and allows for evaporation of the essence that should be flavoring your coffee.
     
  7. Serve coffee immediately after brewing. Fresh brewed coffee allowed to sit on a   warmer will begin to lose it's flavor immediately.  Store brewed coffee in an air-tight thermal container if immediate use is not practical.  Never boil coffee to reheat.
     
  8. Take a moment and enjoy.
